Fresh Salmon eggs
When the eggs are ready, spread the salmon mixture onto one side of the omelet, then top with cheese and pepper; fold the omelet over the filling. Cover and let aside for 1-1/2 minutes to allow the cheese to melt.
Make a tomato rose if desired. Starting at the base of the tomato, peel the skin in a thin continuous strip using a small sharp knife. From the stem end, roll up tightly, skin side out. Place the end of the strip under the rose and on top of the omelet. Cut two leaves from the green pepper. Place a tomato rose on either side.
